Description

Baked Feta Potatoes is an easy Mediterranean one-pan recipe that combines roasted baby potatoes with creamy feta cheese, cherry tomatoes, and olives for a delicious and hearty dish.

Ingredients

Scale
  • 1.5 lbs (700 g) baby potatoes, halved
  • 200 g (7 oz) block feta cheese
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup (150 g) cherry tomatoes, halved
  • 1/4 cup (35 g) pitted kalamata olives (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread the potatoes evenly on the baking sheet. Place the block of feta in the center and scatter cherry tomatoes and olives around.
  4. Bake for 25–30 minutes, or until potatoes are tender and slightly golden.
  5. Remove from oven and mash the feta slightly with a fork, mixing it with tomatoes and potatoes.
  6. Garnish with fresh basil or parsley and serve warm.

Notes

  • For a stronger olive flavor, use more kalamata olives.
  • This dish is best served warm, but leftovers can be stored in the refrigerator.
