Description

Delicious baked salmon meatballs paired with a zesty avocado sauce, perfect for quick meals or special occasions.

Ingredients

Scale
  • 1 lb salmon fillets, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tablespoon fresh dill or parsley, chopped
  • Salt and pepper to taste
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1/4 cup Greek yogurt
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Add the salmon, breadcrumbs, onion, garlic, egg, dill or parsley, salt, and pepper to a food processor. Pulse until well combined.
  3. Form the mixture into meatballs about 1-1.5 inches in diameter and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes, until cooked through and lightly browned.
  5. Prepare the zesty avocado sauce by blending the avocados, lime juice, Greek yogurt, and a pinch of salt until smooth.
  6. Serve the baked salmon meatballs warm, drizzled with the avocado sauce.

Notes

Make sure to use fresh salmon for the best flavor. You can chill the mixture if it feels too wet to help the meatballs hold together.
