Description

Cheesy One Pot Beef is a hearty and comforting dish made with ground beef, vegetables, and creamy cheddar cheese all cooked together in one pot.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1.8 pounds starchy potatoes, preferably white, sliced
  • 2 Romano peppers, chopped
  • 1 yellow onion, finely chopped
  • 2 garlic cloves, minced
  • Fresh parsley for garnish
  • 1.1 pounds lean ground beef
  • 1 teaspoon sweet paprika
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon chili flakes
  • 2 tablespoons double concentrated tomato paste
  • 2 cups chicken broth
  • 1.5 cups grated cheddar cheese

Instructions

  1. Chop the peppers and onion. Mince garlic cloves. Slice the potatoes into even pieces.
  2. Heat olive oil and butter in a nonstick skillet over medium-high heat. Add sliced potatoes and cook until golden brown, about 6 minutes. Remove potatoes and set aside.
  3. In the same skillet, sauté chopped peppers until soft, approximately 3 minutes. Add ground beef and cook until browned.
  4. Stir in minced garlic and chopped onion; cook until fragrant. Incorporate sweet paprika, black pepper, Italian seasoning, salt, chili flakes, and tomato paste, mixing thoroughly.
  5. Return the browned potatoes to the skillet along with chopped parsley. Pour in chicken broth and cover. Simmer for about 10 minutes or until potatoes are tender.
  6. Sprinkle grated cheddar cheese evenly over the skillet contents. Cover again and allow cheese to melt completely. Serve hot garnished with extra parsley.

Notes

  • For a spicier version, increase the amount of chili flakes.
  • Ensure the potatoes are sliced evenly for consistent cooking.
  • Any leftover dish can be stored in the refrigerator for up to 3 days.
