Description

Quick and satisfying wraps filled with shredded chicken, fresh veggies, and creamy peanut sauce.

Ingredients

  • Shredded chicken (store-bought rotisserie works great)
  • Lettuce (romaine or butter)
  • Carrots (julienned)
  • Cucumber (thinly sliced)
  • Bell peppers (any color, thinly sliced)
  • Peanut sauce (homemade or store-bought)
  • Tortilla wraps (flour or whole wheat)
  • Optional toppings: Fresh cilantro and chopped peanuts

Instructions

  1. Mix the chicken and peanut sauce until well coated.
  2. Prepare your wraps by laying them flat on a clean surface.
  3. Layer the lettuce, then pile on the carrots, cucumber, and bell peppers.
  4. Add the chicken mixture on top of the veggies.
  5. Roll tightly from one edge, tucking in the sides as you go.
  6. Slice the wrap in half for easier eating and serve immediately or wrap in foil for later.

Notes

Let the homemade peanut sauce cool slightly before mixing for best results. Use the crunchiest veggies for added texture.
