Description

A creamy and comforting casserole that combines tender chicken, caramelized onions, and orzo pasta, topped with bubbling mozzarella cheese.

Ingredients

Scale
  • 2 cups rotisserie chicken, shredded
  • 1 cup orzo pasta
  • 2 large onions, caramelized
  • 1 cup cream cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter in a large skillet and add sliced onions. Cook until caramelized, about 20 minutes.
  3. Bring chicken broth to a boil in a pot and add orzo. Cook according to package instructions, then drain.
  4. Combine shredded chicken, caramelized onions, cooked orzo, cream cheese, and half of the mozzarella cheese in a large mixing bowl. Season with salt and pepper.
  5. Pour the mixture into a greased casserole dish and top with remaining mozzarella cheese.
  6. Bake for 25-30 minutes until bubbly and golden.
  7. Garnish with fresh thyme before serving.

Notes

For a crispy top, consider broiling for a minute or two at the end of the baking time. Serve hot for the best texture.
