Description

A vibrant and refreshing bowl featuring juicy shrimp, fresh veggies, and a creamy finish of feta and Greek yogurt.

Ingredients

  • Shrimp: 1 pound, peeled and deveined
  • Lemon juice: From 1 lemon
  • Garlic: 2-3 cloves, minced
  • Rice or quinoa: 1 cup
  • Cucumbers: 1 cup, diced
  • Tomatoes: 1 cup, halved
  • Feta cheese: ½ cup, crumbled
  • Olives: ½ cup, pitted and sliced
  • Greek yogurt: ½ cup
  • Olive oil: 2 tablespoons
  • Salt and pepper: To taste

Instructions

  1. Marinate the shrimp: In a large bowl, mix your shrimp with lemon juice, minced garlic, a bit of salt, and pepper. Let it marinate for about 15 minutes.
  2. Cook the rice or quinoa: Prepare according to the package instructions.
  3. Cook the shrimp: In a skillet, heat olive oil over medium heat. Add the marinated shrimp and cook until pink and opaque, about 3-4 minutes.
  4. Assemble the bowl: In a serving bowl, layer cooked rice or quinoa, shrimp, diced cucumbers, halved tomatoes, crumbled feta, and olives.
  5. Add a drizzle of Greek yogurt on top. Serve immediately while warm.

Notes

For best results, marinate the shrimp longer and avoid overcooking.
