Description

A vibrant and delicious Greek Tortellini Pasta Salad that combines cheese-filled tortellini, fresh vegetables, and a flavorful Greek dressing, perfect for summer barbecues or as a quick meal.

Ingredients

  • Cheese-filled tortellini (fresh or frozen)
  • Bell peppers, chopped
  • Cucumbers, chopped
  • Tomatoes, chopped
  • Kalamata olives
  • Feta cheese, crumbled
  • Greek dressing (store-bought or homemade)

Instructions

  1. Cook the tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually about 2-4 minutes until they float. Drain and let cool.
  2. Chop the vegetables: While the tortellini cools, chop your bell peppers, cucumbers, and tomatoes into bite-sized pieces.
  3. Mix it up: In a large bowl, combine the cooled tortellini, chopped veggies, olives, and crumbled feta cheese gently.
  4. Dress it: Drizzle with your Greek dressing and toss everything well until every piece is coated.
  5. Chill: Cover the salad and pop it in the fridge for at least 30 minutes before serving.

Notes

This salad tastes better the longer it sits, so feel free to make it a day in advance. Add grilled chicken or shrimp for a protein boost.
