Description

A comforting dish of flavorful jerk meatballs in a creamy coconut curry sauce, perfect for chilly evenings or quick meals.

Ingredients

Scale
  • 1 lb ground beef or chicken
  • 2 tablespoons jerk seasoning
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 tablespoon chopped green onions
  • Salt and pepper to taste
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • Fresh cilantro for garnish

Instructions

  1. Mix the ground meat with jerk seasoning, breadcrumbs, egg, chopped green onions, salt, and pepper in a large mixing bowl. Form into meatballs about 1-2 inches in diameter.
  2. Heat a frying pan over medium heat, add a splash of oil, and cook the meatballs until browned all over, about 8-10 minutes.
  3. Pour the coconut milk, curry powder, minced garlic, and ginger into a separate pot. Stir and simmer for about 5 minutes.
  4. Add the browned meatballs into the coconut curry sauce and let them simmer together for another 15-20 minutes.
  5. Garnish with fresh cilantro and serve over rice or with crusty bread.

Notes

Don’t skip browning the meatballs for extra flavor. Add a splash of coconut milk when reheating leftovers.
