Description

These Lean Ground Turkey Zucchini Boats are a quick, delicious, and customizable meal that packs protein and flavor.

Ingredients

Scale
  • 4 medium zucchinis
  • 1 pound lean ground turkey
  • 1 cup diced tomatoes
  • 1 cup bell peppers, diced
  • 1 small onion, diced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the center to create boats.
  3. Drizzle the zucchini halves with olive oil and season with salt and pepper.
  4. Heat a splash of olive oil in a skillet over medium heat and sauté the onion and garlic until softened.
  5. Add the ground turkey, Italian seasoning, diced tomatoes, and bell peppers. Cook until the turkey is browned.
  6. Fill each zucchini boat with the turkey mixture, and top with shredded cheese.
  7. Place the boats in a baking dish and cover with foil. Bake for 25-30 minutes.
  8. Remove foil and bake for an additional 5 minutes until the cheese is bubbly and golden.
  9. Serve warm.

Notes

Letting the zucchini sit after scooping makes them sturdier. Avoid overcooking for a bit of a bite.
