Description

A quick and flavorful dish featuring flaky salmon and zesty lemon orzo, all cooked in one skillet for minimal cleanup.

Ingredients

Scale
  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 2 cups baby spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 clove garlic (minced)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Heat the skillet: In a large skillet, heat the olive oil over medium heat.
  2. Cook the salmon: Season the salmon fillets with salt and pepper. Place them in the skillet and cook for about 5-6 minutes on each side until flaky. Remove and set aside.
  3. Sauté garlic: In the same skillet, add minced garlic and cook for about 30 seconds.
  4. Add orzo: Stir in the orzo and chicken broth, bring to a boil, then reduce heat and simmer for about 10 minutes until tender.
  5. Mix in lemon and spinach: Add lemon juice, zest, and spinach, cooking until spinach wilts.
  6. Combine salmon: Flake the cooked salmon into the orzo mixture and gently fold.
  7. Final touches: Adjust seasoning with salt and pepper as needed.
  8. Serve: Serve warm, garnished with fresh herbs if desired.

Notes

Don’t skip on the lemon zest — it really elevates the dish!
