Description

A quick and easy dish combining succulent shrimp, colorful veggies, and fluffy rice in one skillet for effortless cooking and cleanup.

Ingredients

Scale
  • 2 cups cooked rice (day-old rice works best)
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil in a large skillet over medium heat.
  2. Cook the shrimp until they turn pink, about 3-4 minutes, stirring often.
  3. Push the shrimp to one side and pour the beaten eggs on the other side; scramble until cooked.
  4. Add the mixed vegetables and cooked rice, mixing well.
  5. Stir in the soy sauce, ensuring the rice is coated.
  6. Let it fry for another 2-3 minutes to allow the rice to get crispy.
  7. Top with green onions and season with salt and pepper to taste.
  8. Serve hot and enjoy!

Notes

Using day-old rice will give the best texture. Don’t rush the frying step for optimal flavor.
