Description

A vibrant and delicious pasta salad featuring colorful spirals, fresh veggies, and creamy mozzarella, perfect for summer gatherings.

Ingredients

Scale
  • 2 cups colorful pasta spirals
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls
  • 1 cup blueberries
  • 1/2 cup red bell pepper, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil the colorful pasta spirals according to package instructions. Make sure you stir often so it doesn’t stick. Once done, drain and let cool.
  2. Combine the Ingredients: In a large bowl, toss together the cooled pasta, cherry tomatoes, mozzarella balls, blueberries, red bell pepper, and fresh basil.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. This part really ties everything together; don’t rush this step!
  4. Mix it All Together: Pour the dressing over the pasta salad and toss gently to combine.
  5. Serve: Chill for a bit before serving, or you can serve it at room temperature.

Notes

For the best flavor, prepare a couple of hours in advance. This salad pairs wonderfully with grilled meats and can be stored in the fridge for 3-4 days.
