Ingredients

Scale
  • 1 Fresh pineapple, peeled and cut into rings
  • 1/2 cup Dark rum
  • 1/4 cup Brown sugar
  • 1 cup All-purpose flour
  • 1/2 cup Cornstarch
  • 1 tsp Baking powder

Instructions

  1. Soak the pineapple rings in dark rum for at least an hour.
  2. Mix flour, cornstarch, baking powder, and salt in a bowl.
  3. Whisk eggs and water in another bowl, then combine with the dry ingredients to make a batter.
  4. Heat oil in a deep frying pan over medium heat.
  5. Dip the rum-soaked pineapple rings in the batter and fry until golden brown.
