Description

A fluffy and slightly chewy focaccia bread infused with zesty lemon and sweet blueberries, perfect for any occasion.

Ingredients

Scale
  • 2 cups sourdough starter
  • 3 cups all-purpose flour
  • 1 cup warm water (about 110°F or 43°C)
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1/4 cup olive oil
  • 1 lemon (zest and juice)
  • 1 cup fresh blueberries
  • Flaky sea salt (for topping)

Instructions

  1. Mix the sourdough starter, warm water, and sugar until combined.
  2. Add the flour, salt, lemon zest, and lemon juice. Stir until a dough forms.
  3. Knead the dough for a few minutes until it’s smooth, folding in the blueberries carefully.
  4. Place the dough in a greased bowl, cover it, and let it rise for about 4-6 hours, or until doubled in size.
  5. Preheat your oven to 425°F (220°C).
  6. Transfer the dough onto a greased baking sheet and spread it out gently.
  7. Dimple the surface of the dough, drizzle with olive oil, and sprinkle with flaky sea salt.
  8. Bake for 20-25 minutes or until the top is golden brown.
  9. Allow the focaccia to cool slightly before slicing and serving.

Notes

Patience is key for sourdough. Rushing the rise may affect the flavor and texture.
