Description

A refreshing salad that combines earthy spring mix greens with sweet tomatoes and crunchy nuts, drizzled with a homemade balsamic honey dressing.

Ingredients

Scale
  • 4 cups Spring mix greens
  • 1–2 medium Ripe tomatoes, chopped
  • ½ cup Crunchy nuts (walnuts or almonds)
  • ¼ cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • Salt, to taste
  • Ground pepper, to taste

Instructions

  1. In a large bowl, combine the spring mix greens and chopped tomatoes. Ensure the greens are clean and dry; nobody likes a soggy salad!
  2. Toast the nuts in a dry skillet over medium heat until golden. Keep stirring; nuts can go from perfect to burnt in a heartbeat. Then add them to the salad.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing. Taste it as you go! Adjust the sweetness or tanginess to your liking.
  4. Drizzle the dressing over the salad and gently toss to combine. Don’t rush this step—it’s where the magic happens.
  5. Serve immediately and enjoy those refreshing flavors!

Notes

Use the freshest greens and tomatoes for the best flavor. Toasting the nuts enhances their taste.
