Description
A vibrant and fresh salad packed with colorful veggies and a creamy peanut dressing.
Ingredients
- Rice paper wrappers
- Mixed salad greens (like romaine and spinach)
- Shredded carrots
- Cucumber (julienned)
- Bell peppers (sliced)
- Fresh herbs (like mint and cilantro)
- Avocado (sliced)
- Peanut butter
- Soy sauce
- Lime juice
- Honey or maple syrup
- Garlic (minced)
- Water
Instructions
- Prepare the peanut dressing: In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, and just enough water to reach your desired consistency. Set this aside.
- Soak the rice paper wrappers: Fill a shallow dish with warm water. Soak each wrapper for about 10-15 seconds, just until they’re soft.
- Assemble your rolls: Place a soaked wrapper on a flat surface. In the center, add a small handful of salad greens, shredded carrots, julienned cucumber, bell peppers, fresh herbs, and a few slices of avocado.
- Wrap it up: Fold the sides of the wrapper over the filling and roll it up tightly.
- Repeat the process with the remaining wrappers and filling ingredients.
- Serve: Arrange the rolls on a platter and serve the peanut dressing on the side for dipping.
Notes
Use fresh veggies for the best crunch. Store leftovers in an airtight container for 2-3 days, but best enjoyed fresh.
